If you made New Year’s resolutions this year, I hope you’re still staying on track with them! If one of your resolutions was to be better to your body, then let me help you out a bit by giving you this super healthy and super delicious recipe for almond crusted chicken. I’ve lost 24lbs over the last few months (surprisingly, I didn’t gain it all back on my trip to Jamaica), and this is one of the things I ate often. If you’re trying to eat healthier in 2017 you’ll thank me for this recipe when you start craving chicken nuggets – MAKE THIS INSTEAD!! Seriously, this will satisfy your craving. Best part is? They’re baked, not fried, they’re gluten free, and they take no time to prepare. Oh, and did I mention the sauce?? The dipping sauce is delicious – most dipping sauces are mayonnaise-based, but I used Greek yogurt instead of mayo (hello guilt-free sauce), and a lot of roasted garlic. If you need tips on roasting your own garlic, you can check out the notes at the bottom of this recipe. If you really aren’t in the mood to roast garlic, you can substitute one minced clove of raw garlic for all the roasted garlic – but you should seriously consider roasting it – it’s well worth the effort! 

I played around with this recipe a bit, and I’ve included two variations for you to try; one with parmesan cheese, and the other with nutritional yeast. Both are delicious, and if you don’t have either parmesan or nutritional yeast on hand, you can always substitute it for more ground almonds.

Almond Crusted Chicken

Prep Time: 10 minutes

Cook Time: 20 minutes

Yield: 4 servings

This almond crusted chicken will satisfy ALL your chicken nugget cravings, without the guilt of eating deep fried chicken nuggets! You've gotta try these!

Ingredients

    For the almond crust:
  • 1 cup sliced almonds
  • ½ cup Parmesan cheese or Nutritional yeast*
  • 1 tsp salt
  • 1 tsp smoked paprika
  • ½ tsp black pepper
  • ½ tsp dried thyme (or 1 tsp fresh)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • For the chicken:
  • 2 chicken breasts cut into strips about ½ inch thick
  • 2 tsp olive oil
  • 2 cloves minced garlic
  • ½ tsp salt
  • ½ tsp black pepper
  • For the dipping sauce:
  • 1/3 cup plain Greek yogurt
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1 tsp salt
  • 6 cloves roasted garlic**

Instructions

  1. Preheat oven to 450°F.
  2. Line a baking sheet with foil, and set aside.
  3. For the almond crust:
  4. Put all of the ingredients for the crust in a food process and pulse until fine.
  5. If you don't have a food processor, put the almonds in a big ziplock bag, and crush them with a heavy-bottomed frying pan until fine. Mix in the rest of the ingredients.
  6. For the chicken:
  7. In a bowl, combine the strips of chicken with the olive oil, garlic, salt, and pepper.
  8. Coat each strip in the almond mixture, and place on the baking sheet lined with foil. Do this until all the chicken is coated.
  9. Bake for 10 minutes, then flip each piece.
  10. Bake on the other side for another 10 minutes.
  11. For the Sauce:
  12. Combine all the ingredients with a fork, mashing the roasted garlic as you mix it.
  13. Dip the chicken strips in, and enjoy!
