Happy Sunday everyone! 

I feel like I’ve been out of my blogging game for too long, I’m sorry for depriving you all of recipes again. I’ve just been busy – this week is my last week of my first year of culinary school (time flies, holy crap!); I’ve also been working, and packing (we’re moving this week, yay!), aaaand I’ve been taking care of my poor little sick boyfriend 🙁 I hate to see Adam so weak and sick; the flu sucks! Luckily, I make a great caregiver (don’t I, Adam?), so he’s finally starting to get better – right in time for our move! 

Anyway, If you’ve read the “about me” section of my blog, you’ll notice that I talk about my favourite recipe for tomato sauce – I made it up when I was about 11, and I’ve been using it ever since! I know you might be thinking, “Seriously? That’s the best she could come up with? Tomato sauce?” Ummm… yes! This is not just any ordinary tomato sauce! It’s sweet, spicy, and savoury – it makes your tastebuds tingle; not to mention it’s SUPER versatile! Bonus: It freezes very well, so feel free to double this recipe like I usually do and freeze some for later.

Here are my favourite things to do with this sauce (in no particular order):

  1. PIZZA!!!!!!! You might think a sweeter tomato sauce is weird on pizza, but you need to try it, trust me.

  2. Ratatouille (like these amazing ratatouille galettes I made not too long ago).

    I used this tomato sauce in my ratatouille galettes. You've gotta try these!

  3. Meatballs (and spaghetti, if you’re into that kinda thing – my baked turkey meatballs are delicious all on their own, with this sauce of course!)

  4. Lasagna (or any other pasta for that matter)
  5. Mussels! Oh my god – steam a pound of mussels in this sauce, then serve it over pasta, or with garlic bread – ummm, helloooo drool-worthy dinner!

Of course you can use this tomato sauce in any other way you’d use regular tomato sauce, except this recipe will make everything 100000x better, obviously. 🙂 

Awesome (Tomato) Sauce

Prep Time: 5 minutes

Cook Time: 20 minutes

Total Time: 25 minutes

Yield: About 3-4 cups tomato sauce

This sweet, spicy, and savoury tomato sauce is super versatile and seriously delicious! Great on pizza, pasta, with mussels, and on a spoon!

Ingredients

  • 3 cloves garlic, minced
  • 1 red onion, diced
  • small piece of scotch bonnet pepper (or habanero), minced
  • 2 tbsp olive oil
  • 1/2 tsp dried thyme
  • 1 small can tomato paste
  • 1 can diced tomatoes (do not drain)
  • 1 can tomato sauce
  • 1/4 cup red wine (optional)
  • 2-3 tbsp brown sugar (to taste)
  • salt and pepper, to taste
  • handful of fresh basil, chopped
  • handful of fresh parsley, chopped

Instructions

  1. In a medium-sized sauce pan, saute onions and garlic in olive oil over medium heat, about 3 minutes.
  2. Add pepper and thyme, and continue to sauté until onions are translucent and nicely browned.
  3. Add tomato paste, cook another 2 minutes.
  4. Add tomato sauce, diced tomatoes with juice, and red wine.
  5. Simmer for 10 minutes.
  6. Add brown sugar, season with salt and pepper.
  7. Let simmer for another 5 minutes, then add fresh parsley and basil.
  8. Serve with pasta, mussels, pizza, etc. Enjoy!

Notes

If you prefer a smoother sauce, feel free to run this through a blender!
