Happy Sunday!!!!! 

It’s been five weeks since I’ve posted, I am so sorry!! Let me just say that it’s not easy working full time, having a life, and running a blog! Anyway, I’m back this weekend, and boy oh boy have I got something delicious for you!!! Beets are in season right now – they are at farmer’s markets, supermarkets… they are everywhere! AND they’re dirt cheap. The funny thing is, I used to hate beets – I thought they tasted like dirt (see what I did there?) – but I always wanted to like them, because how can you not like a veggie that stains everything bright pink? I love them now, and while they are very earthy, with the right recipes and preparation methods, they are soooo delicious! They’re also super versatile. The other day I was making rhubarb curd, and my curd wasn’t pink enough, so I peeled a beet and extracted some juice from it, and voila! I got super pink curd, without using any nasty artificial food colouring! I still don’t love roasted beets, but oh man, I could eat them raw in this salad all day!

Before you make this beet salad, let me warn you about two things: 

  1. This salad will stain everything!! You can line your cutting board with plastic wrap if you want to, and you can wear gloves too if you really don’t want pink everywhere – or you can embrace the beets and get pink!! 
  2. When you wake up the next morning and go to the bathroom, just remember that you ate beets the day before; you’re not dying, even if it looks like you’re bleeding internally! Remember, beets stain everything, even your insides! 😉

Anyway, enough talking, here’s the recipe. And since beets are so readily available everywhere (and I mean everywhere), I seriously encourage you to try this salad. Raw Beet Salad with Orange Vinaigrette

Prep Time: 10 minutes

Total Time: 10 minutes

Yield: 4-6 servings

This raw beet salad with an orange vinaigrette will have you licking the bright pink juice right off your plate!

Ingredients

  • 3 or 4 medium-sized beets, peeled
  • 1 orange, zested and juiced
  • 1 lemon, zested and juiced
  • 1/4 cup white balsamic vinegar
  • 1 tsp dijon mustard
  • 1tbsp honey
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 chives, thinly sliced

Instructions

  1. Using the julienne attachment on a mandoline slicer, shred the beets. Alternatively, you can use a cheese grater to shred the beets (or you can use a knife, and your awesome knife skills!). Set aside.
  2. In a medium sized bowl, whisk the orange zest and juice, lemon zest and juice, balsamic vinegar, dijon mustard, and honey, until well combined.
  3. Add olive oil and whisk until combined. Season with salt and pepper.
  4. Add beets to the bowl and toss until fully coated with dressing.
  5. Garnish with chives, and serve.*

Notes

*This salad gets even better if you let it sit in your fridge for 30 minutes or longer to marinate.
